Smoked Chorizo Castellano from Dungannon’s Ispini is their take on the Spanish classic cured meat. These chorizo are made from 100% local, Northern Irish pork seasoned with a blend of hot and sweet smoked paprika certified from the Pimenton De la Vera region of Spain. This is another Great Taste Award winner from the Ispini gang: the judges said “the aroma hit us squarely in the face and we loved it.”
Ispini was started by Jonathon Cuddy from Dungannon after a book gifted to him by his wife sparked an interest in cured meats. As he learned more about the artform he developed a passion for it and eventually enrolled in the School of Artisan Food in Nottingham to hone his craft. From this, Ispini was born, and we are very thankful indeed! All Ispini products are handmade with love using local Northern Irish pork.
Smoked Chorizo Castellano has a beautiful sweetness to it with a spice that hits you in the aftertaste. A wonderful addition to a cheese toasty – try it with Drumlin Chilli and Wild Garlic…yum!
