Broighter Gold Lemon Infused Oil is a delicious rapeseed oil infusion produced by Richard and Leona Kane of Broglasco Farm in Limavady.
Richard is the 6th generation of Kanes that have farmed the rich soils of Myroe, Limavady, over the last 100 years. The idea to sell rapeseed oil came when Leona was cooking steaks for their dinner only to find she had run out of olive oil. Richard grabbed a tub of cold-pressed, unfiltered rapeseed oil that he had made using some of that year’s rapeseed crop. To her surprise, Leona found that the steaks cooked more evenly than with olive oil and had no bitter aftertaste that often comes with burnt olive oil. Not only that, but the salad dressing she made with the oil was second to none.
Richard and Leona joked that this was their very own ‘Broighter Gold’ and so the idea was born. The name refers to the Broighter Gold Hoard: a collection of Iron Age gold artefacts discovered in Limavady in 1896.
Broighter Gold Rapeseed Oil is low in saturated fat and contains Omega 3, 6 and 9 so it is healthy as well as delicious. It is one of the few unblended oils that can be heated to frying temperature without smoking and burning. It has a smooth nutty flavour that make it perfect for salad dressings as well as cooking.
This lemon infused oil is perfect for adding a citrusy tang to a simple salad dressing. Combine 3 tablespoons of oil, 1 tablespoon of tarragon infused white balsamic vinegar (get it here!) and a teaspoon of Dijon mustard. Shake well to combine (the mustard helps form a thick creamy emulsion) and season with sea salt and black pepper.
