Sheridan’s developed their duck confit in the kitchen of their Galway shop. The recipe was perfected there by chef Enda McEvoy. Over the years the volume became too much for their little kitchen, and in 2008, they began working with the Steele family at their farm in Co. Monaghan. They now produce their confit using their recipe to the same exacting standards as thy did all those years ago.

Fabulous selection of local products. Great staff who took the time to be really helpful, and offered tasting of the produce. Nothing was too much trouble. Great range of products – wish I had had more time to browse. I can’t wait to return.
