WHAT’S IN THIS MONTH’S BOX?
Young Buck is a crumbly young stilton styled blue cheese made from raw cows milk from Mike Thomson in Co. Down, with a well-rounded creaminess balancing a mildly spiced blue vein and tropical fruit flavours. Sensational.
Coolattin Vintage is a raw milk cloth bound cheddar styled cheese from Tom Burgess in Wicklow, with a firm texture this cheese packs flavours that are fruity, brothy and nutty. Extra mature.
Tipperary Brie is a double cream cheese with a fat content of 65-70%, meaning that additional cream is added to the milk thus ensuring a fuller flavour. This open textured, bloomy rind cheese has a wonderfully full, creamy flavour with a mild, rich finish. Christmas indulgence!
Gubbeen is a surface ripened, semi-soft cheese made by the Ferguson family in Schull Co. Cork, that’s creamy with mushroom and nutty after tastes. A classic Irish cheese.
Corleggy Goats is a hard cheese handmade in County Cavan from raw goat’s milk. A typical Irish goats cheese because the goats graze the rich pasture and eat more grass than their southern European cousins…that makes for sweeter milk and in time cheese. Corleggy Goat is eight weeks to four months matured depending on season weather & humidity. The rind is natural & edible and very flavoursome. We feel that the aroma and taste strike a perfect balance between rich and mild.

All of our products are made in very small batches so sometimes we run out. If this is the case, we will replace it with something at least equal in value and deliciousness.

All glass bottles and fragile items are wrapped in either bubble wrap or corrugated card for additional protection, please make us aware should you have any breaks/spoilages. If there are chilled items included within your gift we will pack these for delivery in our eco-friendly Woolcool delivery pouch system guaranteeing a constant temperature for up to 72 hours, and please select a delivery day Wednesday-Friday, as we prefer not to ship chilled orders after Wednesday (Mainland UK) or Thursday (NI/ROI) as delays will mean the goods sit in the couriers warehouse over the weekend and probably spoil. Please ensure that whoever receives the delivery unpacks and refrigerates the chilled part of the gift immediately.
